Description
A delicious and easy dessert featuring strawberries and dairy-free chocolate.
Ingredients
Scale
- 6–8 strawberries (thinly sliced)
- 1/2 cup dairy-free chocolate chips
- 1 teaspoon coconut oil
- 1/4 cup peanut butter
- cacao nibs (to sprinkle on top)
- crushed peanuts (to sprinkle on top, optional)
- flakey sea salt
Instructions
- Slice strawberries thinly, then arrange them in flower-shapes over a parchment paper-lined baking sheet (or any flat serving dish), using about 5 slices for each, with the tips facing the center.
- Add melted chocolate (I heated dairy-free dark chocolate chips with a small spoonful of coconut oil) over top each piece of bark, freeze for 3-5 minutes, then add creamy peanut butter.
- Stir over the chocolate, add cacao nibs and/or crushed nuts, then freeze until peanut butter has hardened, about 20-30 minutes.
- Remove from freezer and add flakey sea salt. Enjoy right away or transfer to the fridge / keep out at room temp, so the strawberries can soften.
- Store any leftovers (if there are any!) in an airtight container in the freezer for up to one month.
Notes
- This recipe is great for a quick dessert or snack.
- Experiment with different toppings like chopped almonds or shredded coconut.
