Description

A delicious herb roasted chicken served with broccoli and cherry tomatoes, perfect for a family dinner.


Ingredients

  • 1 whole chicken
  • 1/2 cup unsalted butter, softened
  • 4 cloves garlic, minced
  • 1 tablespoon fresh rosemary, chopped
  • 1 tablespoon fresh thyme, chopped
  • 1 lemon, juiced
  • Salt and pepper to taste
  • 1 cup cherry tomatoes
  • 2 cups broccoli florets

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. In a bowl, combine the softened butter, garlic, rosemary, thyme, lemon juice, salt, and pepper.
  3. Spread the mixture all over the chicken, making sure to get under the skin as well.
  4. Place the chicken in a roasting pan and surround it with cherry tomatoes and broccoli.
  5. Roast in the oven for about 75 minutes, or until the internal temperature reaches 165°F (74°C).
  6. Let it rest for 10 minutes before carving and serving.
