A delicious herb roasted chicken served with broccoli and cherry tomatoes, perfect for a family dinner.
Ingredients

- 1 whole chicken
- 1/2 cup unsalted butter, softened
- 4 cloves garlic, minced
- 1 tablespoon fresh rosemary, chopped
- 1 tablespoon fresh thyme, chopped
- 1 lemon, juiced
- Salt and pepper to taste
- 1 cup cherry tomatoes
- 2 cups broccoli florets
Instructions
- Preheat your oven to 425°F (220°C).
- In a bowl, combine the softened butter, garlic, rosemary, thyme, lemon juice, salt, and pepper.
- Spread the mixture all over the chicken, making sure to get under the skin as well.
- Place the chicken in a roasting pan and surround it with cherry tomatoes and broccoli.
- Roast in the oven for about 75 minutes, or until the internal temperature reaches 165°F (74°C).
- Let it rest for 10 minutes before carving and serving.
