Description

Delicious and crunchy pickled vegetables that add a burst of flavor to any dish.


Ingredients

Scale
  • 1 cup vinegar
  • 1/2 cup water
  • 1 clove garlic, minced
  • 1/2 tsp sea salt
  • 1/2 tsp sugar (optional)
  • 1/4 tsp dried oregano
  • 1/2 cup shredded carrots
  • 1/2 cup shredded radish
  • 1/3 English cucumber, matchsticks
  • 1/2 red onion, thinly sliced
  • 1 TBSP chopped green onion

Instructions

  1. Combine vinegar, water, garlic, salt, sugar, and oregano in a saucepan. Heat until dissolved.
  2. Pack carrots, radish, cucumber, red onion, and green onion into a jar.
  3. Pour brine over vegetables, ensuring they are submerged.
  4. Seal jar and refrigerate for at least 24 hours before enjoying.
