Delicious oatmeal chocolate chip cookies that are easy to make and perfect for any occasion.

- 1 1/2 cups old-fashioned rolled oats
- 1 cup all-purpose flour
- 1/2 teaspoon baking soda
- 1/2 teaspoon cinnamon
- 1/4 teaspoon salt
- 1/2 cup unsalted butter, softened
- 3/4 cup brown sugar
- 1/4 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 3/4 cup toasted pecans, chopped
- 1/2 cup dark chocolate chunks (optional)
Instructions
- Preheat oven to 350°F (175°C). Spread chopped pecans on a baking sheet and toast for 6–8 minutes. Let cool.
- In a large bowl, whisk together oats, flour, baking soda, cinnamon, and salt.
- In another bowl, cream together butter, brown sugar, and granulated sugar until fluffy (2–3 minutes).
- Beat in eggs one at a time, then add vanilla extract and mix well.
- Slowly add dry ingredients to wet mixture, mixing just until combined.
- Fold in cooled toasted pecans and chocolate chunks (if using).
- Chill dough in the refrigerator for 30 minutes.
- Scoop dough into balls (about 2 tablespoons each) and place on parchment-lined baking sheets.
- Bake for 10–12 minutes, until edges are golden and centers are just set.
- Cool on baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
Notes
- Storing in an airtight container keeps cookies fresh for up to a week.
- For a chewier texture, underbake slightly.
