Description

Making one pan chicken pineapple tacos always feels like a simple way to turn everyday ingredients into something vibrant.

Ingredients

Scale
  • 2 tablespoons olive oil
  • 1 lb boneless, skinless chicken breasts, diced
  • 2 cups fresh pineapple chunks
  • 1 teaspoon chili powder
  • 1/2 teaspoon paprika
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon cumin
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Juice of 1 lime
  • 8 small corn or flour tortillas
  • 1/2 cup diced red onion
  • 1/4 cup chopped cilantro
  • 1/2 cup shredded lettuce
  • 1/2 cup sour cream or plain yogurt

Instructions

  1. Start by heating olive oil in a large skillet over medium heat.
  2. Add the diced chicken and cook for about 5–6 minutes, stirring occasionally, until it begins to brown.
  3. Sprinkle in the chili powder, paprika, garlic powder, cumin, salt, and pepper. Stir well so every piece of chicken is coated in the spices.
  4. Once the chicken is nearly cooked through, add the pineapple chunks directly into the same pan. Let them cook together for another 4–5 minutes.
  5. Squeeze fresh lime juice over the mixture and give everything a final stir.
  6. Warm your tortillas in a separate pan or directly over a flame for a few seconds until soft and pliable.
  7. To assemble your one pan chicken pineapple tacos, spoon the chicken and pineapple mixture into each tortilla.
  8. Top with diced red onion, chopped cilantro, shredded lettuce, and a drizzle of sour cream or yogurt.
  9. Serve immediately while warm.

Notes

  • Each bite offers juicy chicken, bursts of sweet pineapple, and a refreshing crunch from the toppings.
