- 1 lb boneless, skinless chicken breasts, diced
- 2 cups fresh pineapple chunks
- 1 teaspoon chili powder

- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- Juice of 1 lime
- 8 small corn or flour tortillas
- 1/2 cup diced red onion

- 1/2 cup sour cream or plain yogurt
Instructions
- Start by heating olive oil in a large skillet over medium heat.
- Add the diced chicken and cook for about 5–6 minutes, stirring occasionally, until it begins to brown.
- Sprinkle in the chili powder, paprika, garlic powder, cumin, salt, and pepper. Stir well so every piece of chicken is coated in the spices.
- Once the chicken is nearly cooked through, add the pineapple chunks directly into the same pan. Let them cook together for another 4–5 minutes.
- Squeeze fresh lime juice over the mixture and give everything a final stir.
- Warm your tortillas in a separate pan or directly over a flame for a few seconds until soft and pliable.
- To assemble your one pan chicken pineapple tacos, spoon the chicken and pineapple mixture into each tortilla.
- Top with diced red onion, chopped cilantro, shredded lettuce, and a drizzle of sour cream or yogurt.
- Serve immediately while warm.
