Description

Delicious and nutritious Kodiak Cakes banana muffins that are easy to make and perfect for breakfast or a snack.


Ingredients

  • 1 cup Kodiak Cakes Power Cakes mix
  • 2 ripe bananas, mashed
  • 2 large eggs
  • 3 tablespoons honey or maple syrup
  • 1/2 cup milk or milk alternative
  • 1 teaspoon baking powder
  • 1/2 teaspoon cinnamon
  • 1 teaspoon vanilla extract
  • 1/3 cup mini chocolate chips (optional)

Instructions

  1. Preheat oven to 350°F (175°C) and line a 12-cup muffin tin with liners or lightly grease it.
  2. Mash the ripe bananas in a large mixing bowl until smooth.
  3. Add eggs, honey or maple syrup, milk, and vanilla extract and whisk until smooth.
  4. Stir in Kodiak Cakes mix, baking powder, and cinnamon until just combined without overmixing.
  5. Fold in mini chocolate chips if using.
  6. Divide the batter evenly among the muffin cups filling each about three quarters full.
  7. Bake for 18 to 22 minutes or until a toothpick inserted in the center comes out clean.
  8. Allow muffins to cool for 5 minutes in the pan then transfer to a wire rack to cool completely.
