A delicious combination of grilled chicken marinated in lime juice and served with sautéed corn and rice topped with fresh ingredients.

- 2 cups pre-cooked chicken
- 2 tbsp lime juice
- 1 tbsp chili powder
- 1 tsp garlic powder
- 1 tsp salt
- 2 cups corn (fresh/canned)
- 1 cup rice (brown/jasmine/basmati)
- 1 cup toppings (cilantro, avocado, cotija cheese)
Instructions
- In a bowl, combine lime juice, chili powder, garlic powder, and salt. Add the pre-cooked chicken, making sure it gets coated well. Let it marinate for at least 30 minutes for maximum flavor.
- Heat butter in a skillet over medium-high heat. Add the corn (fresh or canned) and sauté until golden brown, about 5-7 minutes.
- Preheat your grill to medium-high. Place the marinated chicken on the grill and cook for 6-7 minutes on each side.
- Rinse the rice thoroughly and cook it according to package instructions, adding a pinch of salt in the cooking water.
- In a large bowl, layer the cooked rice, your grilled chicken, and the sautéed corn. Top with cilantro, diced avocado, and cotija cheese.

- Can swap chicken with grilled shrimp or tofu.
- Lemon juice can serve as a great alternative for lime juice.
- Adjust chili powder to your spice preference.
