- 12 ounces linguine
- 1 tablespoon olive oil
- 1 pound shrimp or chicken, cut into bite-sized pieces
- 1 cup diced bell peppers (red, green, and yellow)
- 1 cup diced brown onion
- 4 cloves garlic, minced
- 2 cups heavy cream
- 1 cup grated parmesan cheese
- 2 tablespoons Cajun seasoning
- Salt and pepper, to taste
- Fresh parsley, chopped (for garnish)
Instructions
- In a large pot of salted boiling water, cook the linguine according to package instructions until al dente. Drain and set aside.
- In a large skillet over medium heat, add the olive oil. Allow it to warm for about a minute.
- Add the shrimp or chicken to the skillet. Season with salt and pepper. Sauté for 5-7 minutes until cooked through. Remove from the skillet and set aside.
- In the same skillet, add the diced bell peppers and onion. Sauté for 3-4 minutes until softened. Add the garlic and sauté for an additional 1 minute.
- Pour in the heavy cream and bring to a simmer. Stir in the Cajun seasoning. Allow the sauce to thicken for about 3-5 minutes.
- Add the cooked linguine and protein back to the skillet. Mix well, allowing the pasta to absorb the sauce.
- Stir in the parmesan cheese until melted and well incorporated. Adjust salt and pepper to taste.
- Remove from heat and garnish with chopped parsley for a fresh touch.
