Ingredients

  • 12 ounces linguine
  • 1 tablespoon olive oil
  • 1 pound shrimp or chicken, cut into bite-sized pieces
  • 1 cup diced bell peppers (red, green, and yellow)
  • 1 cup diced brown onion
  • 4 cloves garlic, minced
  • 2 cups heavy cream
  • 1 cup grated parmesan cheese
  • 2 tablespoons Cajun seasoning
  • Salt and pepper, to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. In a large pot of salted boiling water, cook the linguine according to package instructions until al dente. Drain and set aside.
  2. In a large skillet over medium heat, add the olive oil. Allow it to warm for about a minute.
  3. Add the shrimp or chicken to the skillet. Season with salt and pepper. Sauté for 5-7 minutes until cooked through. Remove from the skillet and set aside.
  4. In the same skillet, add the diced bell peppers and onion. Sauté for 3-4 minutes until softened. Add the garlic and sauté for an additional 1 minute.
  5. Pour in the heavy cream and bring to a simmer. Stir in the Cajun seasoning. Allow the sauce to thicken for about 3-5 minutes.
  6. Add the cooked linguine and protein back to the skillet. Mix well, allowing the pasta to absorb the sauce.
  7. Stir in the parmesan cheese until melted and well incorporated. Adjust salt and pepper to taste.
  8. Remove from heat and garnish with chopped parsley for a fresh touch.
