Instructions
- In a skillet over medium heat, sauté diced onions until translucent.
- Add garlic and ginger, stirring until fragrant.
- Stir in curry powder and let it bloom.
- Add chickpeas and coconut milk, simmering for 10 minutes.
- Fold in the spinach just before serving.
