Description
A delicious creamy garlic chicken gnocchi recipe that is easy to make and full of flavor.
Ingredients

- 2 tablespoons olive oil (divided)
- 1 pound boneless skinless chicken breasts (cut into bite-sized cubes)
- To taste Kosher salt and pepper
- 1 teaspoon Italian seasoning
- 6–8 cloves garlic (minced and divided)
- 1 medium yellow onion (finely diced)
- 28 ounces tomato sauce (one can)
- ¼ cup heavy cream (optional)
- 16 ounces fresh gnocchi (from the fridge section)
- 1 cup shredded mozzarella
- ½ cup freshly grated Parmesan cheese
- To taste freshly chopped herbs like basil or parsley (optional)
Instructions
- Heat 1 tablespoon of the olive oil in a large pan over medium-high heat. Add the chicken in a single layer and season with Kosher salt, pepper, and Italian seasoning. Cook undisturbed for 4-5 minutes until golden, then stir in half of the minced garlic and continue to cook until the chicken is fully cooked through. Remove and set aside.
- In the same pan add the remaining tablespoon of olive oil. Sauté the yellow onion for 3-4 minutes. Add the remaining minced garlic and cook for 1 more minute.
- Stir in the tomato sauce and reduce the heat to medium-low. Simmer the sauce for 10-12 minutes. Add the heavy cream if using and season with salt and pepper.
- Add the cooked chicken and fresh gnocchi into the sauce and continue to simmer for 3-4 minutes, stirring occasionally to avoid sticking, until the gnocchi are tender.
- Remove from heat and sprinkle with shredded mozzarella, freshly grated Parmesan cheese, and freshly chopped herbs if desired.

- This dish pairs well with a side salad.
- You can substitute the gnocchi with pasta if desired.
