Description

A delicious creamy chicken gnocchi dish that combines tender chicken, garlic, and fresh herbs, all in a rich tomato sauce.


Ingredients

  • 2 tablespoons olive oil (divided)
  • 1 pound boneless skinless chicken breasts (cut into bite-sized cubes)
  • to taste Kosher salt and pepper
  • 1 teaspoon Italian seasoning
  • 68 cloves garlic (minced and divided)
  • 1 medium yellow onion (finely diced)
  • 28 ounces tomato sauce (one can)
  • ¼ cup heavy cream (optional)
  • 16 ounces fresh gnocchi (from the fridge section)
  • 1 cup shredded mozzarella
  • ½ cup freshly grated Parmesan cheese
  • to taste freshly chopped herbs like basil or parsley (optional)

Instructions

  1. Heat 1 tablespoon of the olive oil in a large pan over medium-high heat. Add the chicken in a single layer and season with salt, pepper, and Italian seasoning. Cook undisturbed for 4-5 minutes, until golden, then stir in half of the minced garlic and continue to cook until the chicken is fully cooked through. Remove and set aside.
  2. In the same pan, add the remaining tablespoon of olive oil. Sauté the diced onion for 3-4 minutes. Add the remaining minced garlic and cook for 1 more minute.
  3. Stir in the tomato sauce and reduce the heat to medium-low. Simmer the sauce for 10-12 minutes. Add the heavy cream, if using, and season with salt and pepper.
  4. Add the cooked chicken and fresh gnocchi into the sauce and continue to simmer for 3-4 minutes, stirring occasionally to avoid sticking, until the gnocchi are tender.
  5. Remove from heat and sprinkle with shredded mozzarella, grated Parmesan cheese, and freshly chopped herbs if desired.

Notes

  • This dish can be made ahead of time and reheated. Add a splash of water or broth if it thickens too much when reheating.
