Description

Succulent oven baked chicken thighs seasoned with olive oil, lemon, and a blend of spices.


Ingredients

  • 68 boneless skinless chicken thighs
  • 2 tablespoons extra-virgin olive oil
  • 2 tablespoons lemon juice
  • 1 teaspoon lemon zest
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • 1 teaspoon sweet or smokey paprika
  • 1 teaspoon dried oregano
  • 1/2 teaspoon kosher salt
  • 1/2 teaspoon black pepper

Instructions

  1. Preheat the oven to 400°.
  2. Pat the chicken thighs dry with paper towels before putting them in a bowl.
  3. Place them in a large bowl and pour the olive oil, lemon juice, lemon zest, and seasoning over them.
  4. Toss the chicken thighs so they are all lightly coated with the oil, juice, and seasoning.
  5. Leave the chicken thighs folded so they resemble bone-in chicken thighs.
  6. Put the chicken thighs in an oven-proof baking dish and place in the oven uncovered.
  7. Cook the chicken thighs for 20-30 minutes. Timing will depend on the size of the thighs.
  8. If you unfold the chicken thighs and lay them flat, they will cook quicker.
  9. Midway through cooking, remove the baking dish from the oven and give the thighs a quick basting on top with the juices.
  10. Return the dish to the oven to finish cooking.
  11. When the chicken is cooked through, remove from the oven and let the chicken rest in the pan for 3-5 minutes before serving.

Notes

  • For extra flavor, marinate the chicken thighs for a few hours before cooking.
  • This recipe can easily be doubled for larger gatherings.
