- 2 lbs Yukon Gold potatoes
- 1/4 cup olive oil
- 1/3 cup fresh lemon juice
- 4 garlic cloves, minced
- 1 tbsp dried oregano
- to taste Salt and pepper
- 1 cup vegetable broth or water
Instructions
- Preheat your oven to 425°F (220°C).
- Wash and peel the Yukon Gold potatoes; cut them into wedges.
- In a large bowl, whisk together olive oil, lemon juice, minced garlic, oregano, salt, and pepper until well combined.
- Toss the potato wedges in the marinade until evenly coated.
- Transfer the potatoes to a baking dish and pour vegetable broth or water around them.
- Bake for about 45 minutes, turning halfway through until golden brown and fork-tender.
- Serve warm and enjoy!

- For a different flavor, try adding herbs like rosemary or thyme.
- Make sure to cut the potatoes into similar sizes for even cooking.
