Description

Deliciously seasoned Yukon Gold potatoes roasted to perfection.


Ingredients

  • 2 lbs Yukon Gold potatoes
  • 1/4 cup olive oil
  • 1/3 cup fresh lemon juice
  • 4 garlic cloves, minced
  • 1 tbsp dried oregano
  • to taste Salt and pepper
  • 1 cup vegetable broth or water

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Wash and peel the Yukon Gold potatoes; cut them into wedges.
  3. In a large bowl, whisk together olive oil, lemon juice, minced garlic, oregano, salt, and pepper until well combined.
  4. Toss the potato wedges in the marinade until evenly coated.
  5. Transfer the potatoes to a baking dish and pour vegetable broth or water around them.
  6. Bake for about 45 minutes, turning halfway through until golden brown and fork-tender.
  7. Serve warm and enjoy!
