Description
A delicious sweet bread made with sourdough starter and coated in cinnamon sugar, perfect for breakfast or dessert.
Ingredients

- 200 g filtered water
- 85 g sourdough starter
- 70 g cane sugar
- 1 large egg
- 8 g sea salt
- 430 g bread flour
- 8 tbsp unsalted butter (113 g)
- 1 cup brown sugar, packed
- 1/2 tsp ground cinnamon
- 1/2 cup powdered sugar
- 1 tbsp whole milk
Instructions
- In a large mixing bowl, combine 200 g of filtered water and 85 g of sourdough starter, and mix gently.
- Add 1 large egg, 70 g of cane sugar, and 8 g of sea salt, stirring until well incorporated.
- Gradually add 430 g of bread flour until a shaggy dough forms.
- Cover with plastic wrap or a towel and let rise at room temperature for 4-6 hours until doubled in size.
- Flatten the dough onto a floured surface and cut into 1-2 inch pieces.
- In a bowl, mix 1 cup of brown sugar and 1/2 tsp of cinnamon. Toss each dough piece in melted butter, then in the sugar mixture.
- Pile the coated pieces into a greased 9-inch round cake pan and let rise for another hour.
- Preheat the oven to 350°F (175°C) and bake for 30-35 minutes until golden and hollow-sounding when tapped.
- Mix 1/2 cup powdered sugar and 1 tbsp milk to make a glaze and drizzle over the warm bread.

- This bread can be enjoyed warm or at room temperature.
