Description
A delicious and savory kimchi omelette loaded with vegetables.
Ingredients

- 2 Eggs
- 1 tsp Mirin
- 1 tsp Vegetable Oil
- 2 tbsp Kimchi (chopped)
- 2 tbsp Zucchini (chopped)
- 2 tbsp Mushroom (sliced)
- 2 tbsp Spinach (chopped)
- to taste Salt
- to taste Pepper
Instructions
- Whisk egg, mirin, salt and pepper in a bowl.
- Heat vegetable oil in a pan.
- Once the oil is hot, add kimchi, zucchini and mushroom and sauté for 2-3 minutes.
- Add spinach and cook for a few seconds.
- Pour the egg mixture in the pan and cover the pan.
- Cook on medium heat until the eggs are set.
- Fold the omelette into half.
- Serve hot.
Notes
- Adjust the amount of kimchi according to your taste preference.
- Use fresh vegetables for better flavor.
