Ingredients

- 3–4 boneless, skinless chicken breasts
- 4 cloves fresh garlic, minced
- 1 cup unsalted roasted peanuts
- 1 cup mixed bell peppers (red, yellow, green), sliced
- 1 cup broccoli florets (fresh or frozen)
- ¼ cup low-sodium soy sauce
- 2 tsp sesame oil
- 2 tbsp honey or brown sugar
- 1 tbsp cornstarch
Instructions
- Cut chicken into bite-sized pieces and season lightly with salt and pepper.
- Heat 1 tablespoon of oil in a large skillet over medium-high heat. Add chicken and cook until golden brown (5-7 minutes).
- Add minced garlic, bell peppers, and broccoli; stir-fry for about 3-4 minutes until vegetables soften.
- In a bowl, whisk together soy sauce, honey (or brown sugar), sesame oil, and cornstarch until smooth; pour over chicken and veggies in the skillet.
- Stir gently until everything is evenly coated and bubbling (2-3 minutes).
- Sprinkle roasted peanuts on top before serving.
