Ingredients

  • 3 cloves fresh garlic, minced
  • 1 large onion, chopped
  • 3 medium carrots, diced
  • 2 celery stalks, diced
  • 4 cups low-sodium chicken broth
  • 1 cup heavy cream or milk
  • 1 tsp fresh thyme or ½ tsp dried thyme
  • 2 tbsp fresh parsley, chopped (or 1 tbsp dried)
  • Salt and pepper to taste

Instructions

  1. Prepare all ingredients by chopping vegetables and dicing chicken into bite-sized pieces.
  2. In a large pot, heat olive oil over medium heat. Sauté onions and garlic until translucent (about 2-3 minutes).
  3. Add diced chicken to the pot and cook until lightly browned (5-7 minutes).
  4. Stir in carrots and celery; cook for an additional 5 minutes until they soften.
  5. Pour in chicken broth and bring to a gentle simmer for about 15 minutes.
  6. Reduce heat to low; stir in cream or milk along with herbs, salt, and pepper. Cook for another 5-10 minutes until thickened.
