- 4 boneless, skinless chicken breasts (about 1 lb)
- 3 cloves fresh garlic, minced
- 1 large onion, chopped
- 3 medium carrots, diced
- 2 celery stalks, diced
- 4 cups low-sodium chicken broth
- 1 cup heavy cream or milk
- 1 tsp fresh thyme or ½ tsp dried thyme
- 2 tbsp fresh parsley, chopped (or 1 tbsp dried)
- Salt and pepper to taste
Instructions
- Prepare all ingredients by chopping vegetables and dicing chicken into bite-sized pieces.
- In a large pot, heat olive oil over medium heat. Sauté onions and garlic until translucent (about 2-3 minutes).
- Add diced chicken to the pot and cook until lightly browned (5-7 minutes).
- Stir in carrots and celery; cook for an additional 5 minutes until they soften.
- Pour in chicken broth and bring to a gentle simmer for about 15 minutes.
- Reduce heat to low; stir in cream or milk along with herbs, salt, and pepper. Cook for another 5-10 minutes until thickened.
