Description

A delicious breakfast taco filled with scrambled eggs, chorizo, and fresh toppings.


Ingredients

  • 6 large eggs
  • 0 cups milk or cream
  • 1 tbsp olive oil or butter
  • 8 oz Mexican chorizo (or breakfast sausage)

  • 1 bell pepper (mixed red and green, diced)

  • 0 tsp smoked paprika (optional)
  • salt and pepper (to taste)
  • 6 tortillas (flour or corn)
  • 2 tbsp chopped fresh cilantro
  • lime wedges (for serving)

Instructions

  1. Cook chorizo in a skillet over medium heat until browned, then remove and set aside.
  2. Sauté onion and peppers in the same skillet until soft.
  3. Whisk eggs with milk, salt, pepper, and paprika, then pour into the skillet.
  4. Gently scramble eggs until nearly set, then add cheese and cooked chorizo.
  5. Warm tortillas and fill with the mixture.
  6. Top with cilantro and a squeeze of lime. Serve with salsa or avocado.
