A comforting dish of tender chicken breast served with creamy mashed potatoes and rich gravy.

- 2 pounds Russet potatoes (peeled and quartered)
- 1 cup milk
- 3 tablespoons unsalted butter (⅜ stick)
- ¾ teaspoon kosher salt
- ¼ teaspoon ground black pepper
- ½ teaspoon kosher salt
- ½ teaspoon garlic powder
- ½ teaspoon onion powder
- ¼ teaspoon ground paprika
- ½ teaspoon ground black pepper
- 1½ pounds boneless, skinless chicken breasts
- 1–2 tablespoons olive oil
- 3 tablespoons unsalted butter (⅜ stick)
- 3 tablespoons all-purpose flour
- ¼ teaspoon garlic powder
- ¼ teaspoon onion powder
- 2 cups low-sodium chicken broth
- 2 teaspoons low-sodium soy sauce
- 1 teaspoon Dijon mustard
- salt and pepper (to taste)
Instructions
- Place the potatoes in a large pot covered in water. Bring to a boil, cooking until the potatoes are fork tender, about 15 minutes. Drain off the water.
- Mash the potatoes with a potato masher.
- Stir in the milk, butter, salt, and pepper until incorporated.
- Taste, and add more salt and pepper if needed.
- Meanwhile, combine all the chicken seasoning ingredients in a dish. Sprinkle the seasoning over the chicken.
- Heat the olive oil in a large skillet over medium-high heat. Once heated, add in the chicken breasts. Cook for 7-8 minutes on each side until the chicken is cooked through to 165°F and browned on the outside.
- Melt the butter in a saucepan over medium heat. Then, whisk in the flour, garlic powder, and onion powder.
- Slowly pour in the chicken broth while whisking continuously until completely incorporated. Then, whisk in the soy sauce and Dijon mustard.
- Let the mixture simmer, and continue whisking until the mixture thickens. Add in more broth if needed. Season with salt and pepper to taste.
- Serve the chicken and mashed potatoes together. Top with gravy.
Notes
- For extra flavor, consider adding herbs such as thyme or rosemary to the chicken seasoning.
- You can adjust the thickness of the gravy by adding more or less chicken broth.
