This creamy garlic chicken gnocchi recipe is the perfect weeknight dinner, combining tender chicken, luscious sauce, and pillowy gnocchi.

- 2 tablespoons olive oil (divided)
- 1 pound boneless skinless chicken breasts (cut into bite-sized cubes)
- Kosher salt and pepper (to taste)
- 1 teaspoon Italian seasoning
- 6–8 cloves garlic (minced and divided)
- 1 medium yellow onion (finely diced)
- 28 ounces tomato sauce (one can)
- ¼ cup heavy cream (optional)
- 16 ounces fresh gnocchi (from the fridge section)
- 1 cup shredded mozzarella
- ½ cup freshly grated Parmesan cheese
- Freshly chopped herbs like basil or parsley (optional)
Instructions
- Heat 1 tablespoon of the olive oil in a large pan over medium-high heat. Add the chicken in a single layer and season with salt, pepper, and Italian seasoning. Cook undisturbed for 4-5 minutes, until golden, then stir in half of the minced garlic and continue to cook until the chicken is fully cooked through. Remove and set aside.
- In the same pan, add the remaining tablespoon of olive oil. Sauté the onion for 3-4 minutes. Add the remaining garlic and cook for 1 more minute.
- Stir in the tomato sauce and reduce the heat to medium-low. Simmer the sauce for 10-12 minutes. Add the heavy cream, if using, and season with salt and pepper.
- Add the cooked chicken and gnocchi into the sauce and continue to simmer for 3-4 minutes, stirring occasionally to avoid sticking, until the gnocchi are tender.
- Remove from heat and sprinkle with mozzarella, Parmesan cheese, and freshly chopped herbs if desired.
