Ingredients

- 2 cups cabbage (finely shredded)
- 2 large eggs (whisked)
- ½ cup all-purpose flour (or almond flour for gluten-free)
- 1 bunch green onions (chopped)
- to taste salt
- to taste black pepper
- 1 teaspoon garlic powder
- 1 teaspoon paprika (smoked paprika can be used)
Instructions
- Begin by finely shredding about 2 cups of fresh cabbage.
- In a large bowl, crack open 2 eggs and whisk them until they’re bubbly and well-combined.
- Gently fold in the shredded cabbage, ½ cup of flour, and a pinch of salt and pepper into the egg mixture.
- Preheat a skillet over medium heat and add a splash of oil to prevent sticking.
- Using a spoon or small ladle, drop heaping tablespoons of the batter into the pan, flattening them slightly.
- Cook each fritter for about 3-4 minutes on one side until golden brown, then flip and cook for an additional 3 minutes.
- Transfer your fritters to a paper towel-lined plate to absorb any excess oil.
Notes
- For a gluten-free option, use almond flour instead of all-purpose flour.
- Feel free to add herbs or spices to customize the flavor.
