Description

Ingredients

  • ½ cup mayonnaise
  • ¼ cup Thai sweet chili sauce
  • 1 tablespoon chili garlic sauce
  • 3 tablespoons avocado oil (or neutral oil)
  • 1 small yellow onion, diced
  • 1 cup chopped turkey ham
  • 2 beef sausages, sliced
  • 3 cups cooked rice (preferably cold, day-old)
  • ½ cup frozen peas and carrots
  • 3 cloves garlic, minced
  • 2 eggs, whisked
  • 2 tablespoons soy sauce
  • 1 tablespoon oyster sauce
  • 1 teaspoon sesame oil
  • Salt and pepper to taste
  • 2 green onions, chopped (for garnish)
  • Optional: red pepper flakes or extra chili sauce for more heat

Instructions

  1. Make the Bang Bang Sauce: Start by whisking together the mayonnaise, Thai sweet chili sauce, and chili garlic sauce in a small bowl. Set aside. This will serve as both a stir-in and a topping.
  2. Prep Your Pan and Aromatics: Heat a large skillet or wok over medium-high heat. Add 1 tablespoon of avocado oil. Once hot, add diced onions and cook for 2–3 minutes until soft and translucent. Toss in the chopped turkey ham and sliced beef sausage, letting them brown slightly for that smoky flavor.
  3. Stir-Fry the Rice and Veggies: Push the meats and onion to one side of the pan. Add a bit more oil, then toss in the peas and carrots along with the cold rice. Stir-fry everything together, breaking up any clumps and letting the rice get a bit crispy.
  4. Add Garlic and Eggs: Create a well in the center and add the remaining oil if needed. Pour in the whisked eggs and scramble them quickly. Once cooked through, mix everything back together.
  5. Sauce It Up: Pour in the soy sauce, oyster sauce, and sesame oil. Stir to coat the rice evenly. Add salt and pepper to taste. Then, stir in about half of your bang bang sauce, mixing well until the rice is coated and creamy.
  6. Serve and Garnish: Scoop the rice into bowls and drizzle generously with the remaining bang bang sauce. Top with chopped green onions and extra chili sauce or red pepper flakes for heat. Enjoy hot and fresh!
